    What to Eat in July

    We're officially in summer even here in the high mountains above Lake Tahoe. It's easy to figure out what produce to eat this time of year, but I'm featuring recipes with corn, cucumbers, peaches, blueberries, and watermelon this month.

    Any of these dishes are perfect all summer long and there are a few extra ideas for your table on the 4th of July.

    Any farmer's market you happen along this month will be filled with vendors with freshly harvested produce heaped on their tables. It's a time of year that it's hard to know what fruit or veggie to choose. Here are some ideas that feature corn, cucumbers, peaches, blueberries, and watermelon.

    At the end of this post are some additional ideas for your 4th of July table.

    🌽 Corn

    15-Minute Easy Summer Corn Salad with Tomatoes

    This easy corn and tomato salad uses fresh corn kernels, grape tomatoes, fresh basil and mint, lime juice, and olive oil. That's it! Serve it at BBQs, pot lucks, or take it on a picnic. It's also a great last-minute side dish to a weeknight dinner.

    Healthy Gluten-Free Corn Fritters with Zucchini

    These gluten-free corn fritters will be the best you've ever had. They're include zucchini, yellow squash, a little jalapeño pepper for just a touch of heat, and fresh herbs. These fritters are perfect topped with a kale, mango and avocado salad.

    This cheesy Mexican quinoa casserole is made healthy with quinoa and pumpkin seeds and eliminates the sour cream many similar recipes include. It's packed with protein from the quinoa, black beans and pumpkin seeds, making it a perfect main or side dish for the whole family.

    🥒 Cucumbers

    This chilled cucumber soup hits the spot on a hot summer day for lunch or a starter for a dinner party. Like many others, it includes yogurt plus buttermilk for a little tang, and adds fresh watercress. I top it with a summer salsa of tomatoes, avocado, cilantro and white onion.

    Best ever non-traditional Greek salad with cucumbers, bell peppers, tomatoes, red onion, kalamata olives, and feta cheese. This easy salad is dressed with a oregano vinaigrette.

    Biryani is a well-spiced Indian dish, and although there are a lot of ingredients, there's very little work to do other than combine them. Serve it with a cucumber raita, green mint chutney, and naan for a complete meal.

    🍑 Peaches
