    A Mother's Day Vegetarian Brunch

    Mother's Day vegetarian brunch dishes, ranging from eggs and a popular asparagus side dish, to pancakes, smoothies, and scones.

    Brunch is easy to make vegetarian, what with all the egg, smoothie, pancake, waffle, and bread options. Here are ten of my most popular brunch dishes I've posted over the years - just in case you missed them. And just in time for Mother's Day. A very Happy Mother's Day to all you moms out there (including moms of dogs, cats, and other 4-legged members of your family).

    🥤 DRINKS

    ORANGE – MANGO SMOOTHIE WITH LIME & GINGER

    First up, start brunch with this orange-mango smoothie shooter made with ginger and lime. It's uber-easy to make with frozen mango pieces.

    SPICY MEXICAN CLAMATO MICHELADA

    This mildly spicy Clamato Michelada is made with clamato juice and a light Mexican beer. It's spiced up with hot sauce and horseradish sauce, but it's up to you how spicy you want it!

    AAM PANNA (SPICED MANGO DRINK)

    Aam Panna is a refreshing drink made with green mangos, salt and spices. It's a popular drink in India to beat the heat.

    🫒 APPETIZERS

    10-MINUTE ARTICHOKE DIP

    Make it ahead or at the last minute and spread it on crackers or toasted baguette slices.

    4 INGREDIENT ASPARAGUS PUFF PASTRY TART WITH CHEESE

    This asparagus tart uses store-bought puff pastry to make it super easy. Simply roll out a sheet of thawed puff pastry, spread it with Boursin cheese, and arrange asparagus spears lined up like tall soldiers over the cheese. Finish the tart with grated Parmesan cheese.

    RESTAURANT-STYLE BREAD DIPPING OIL

    Make this dipping oil ahead and serve with crusty bread, toss it with pasta, drizzle a little over roasted vegetables, or use as a dipping oil for artichokes. It turns everything it touches into a star.

    STRAWBERRY SALSA

    This refreshing strawberry salsa combines the sweet flavor of strawberries and agave with savory onion, chocolate nibs, and mint. Lime juice is added tang and sharpens all the flavors. It's a great appetizer served with chevre (goat) cheese and crackers or any salty cheese.

    🍞 BREADS

    STRAWBERRY BUTTERMILK SCONES

    If you and your mom like scones, make these tender strawberry buttermilk scones with lemon zest and ginger. Or make this easy oat scone version with strawberries.

    MY BEST BLUEBERRY COFFEE CAKE

    Or make a coffee cake dotted with blueberries. This one is so fluffy and light from whipped egg whites folded into the batter.

    GLUTEN-FREE VEGAN BANANA MILLET BREAD

    This fantastic banana bread made with millet seed is super easy to make (shown below). All you need is a high speed blender, a mixing bowl, whisk, and loaf pan and about 15 minutes of prep time, mostly spent while the blender works its magic. 

    Or make this banana bread made with caramelized bananas and Einkorn flour. Absolutely delicious.

    🐣 EGGS

    LIGHT ASPARAGUS-GRUYERE QUICHE WITH HASH-BROWN CRUST

    The best quiche, IMHO, is asparagus quiche. This one is lightened with replacing some of the traditional cream with egg whites and low-fat milk. I personally love ones with a hash browns crust, but feel free to make this crustless or with a traditional crust.     ASPARAGUS GRIBICHE

    Gribiche is a French creation.  The egg yolk is mashed into a paste, and whisked with olive oil, vinegar and mustard, then briny flavors are added with capers and cornichon pickles. This recipe uses it to make asparagus gribiche for a great brunch side dish.

    HERBED GOAT CHEESE SOUFFLÉS

    Cheese soufflés are more forgiving than, say, chocolate ones. There's a lot of support from the eggs when the soufflés begin to collapse, and still look beautiful.

    🥞 PANCAKES

    SKILLET GERMAN PANCAKE WITH STRAWBERRIES

    A German Pancake (also called a Dutch Baby) is so full of drama, and so easy to make. This post shows two different ways to make them. The flavor is exactly the same, but one bakes up high on the sides, in the traditional way, and the other puffs up like a soufflé pancake (shown below).

    BLACKBERRY CORNBREAD PANCAKES

    My favorite pancakes have cornflour in the mix. This works particularly well with blackberries, blueberries or raspberries.

    🥧 DESSERT

    STRAWBERRY BLUEBERRY HIBISCUS CRUMBLE

    You can't have brunch without dessert. Hibiscus is perfect combination with strawberries and blueberries in this crumble.

    MINI STRAWBERRY RHUBARB CRISPS

    These mini strawberry-rhubarb crisps with ginger and coconut are perfect for any party.

    FARMHOUSE STRAWBERRY YOGURT CAKE

    This is a simple lemony, strawberry yogurt cake baked with strawberries. Feel free to top them with more strawberries and whipped cream for a fabulous twist on strawberry shortcakes.

      What a great selection of vegetarian brunch ideas. The asparagus gibriche and goat cheese souffle look absolutle to DIE for!!! I am definitely going to be trying both of those!
