    Weekly Meal Plan - July Week 3

    Simple and easy is the theme for this week's vegetarian meal plan including salads that are filling enough to be a main dish, corn fritters, and an easy berries and cream dessert that replaces half of the cream with yogurt.

    We're in high summer here in the mountains, which means it's summer everywhere. And I'm craving summer fruits and veggies. Here's a summer vegetarian meal plan for the week ahead that makes excellent use for produce that's in season.

    VEGETARIAN MEAL PLAN

    V = Vegan; GF = Gluten Free; DF = Dairy Free

    MONDAY:  Italian Caprese Panini with Pesto

    TUESDAY:  Summer Vegetable Tart with Zucchini, Corn, and Herbs

    WEDNESDAY:  Mexican Street Corn Casserole

    THURSDAY:  Moroccan Couscous Salad (easily made V, DF)

    Chilled Cucumber Soup with Watercress (GF)

    FRIDAY:  Avocado Toast with Chickpea Salad (easily made V, DF)

    DESSERT: Fat-Free Peach Frozen Yogurt with Honey (GF)

    M O N D A Y

    Grilled Italian Pesto Caprese Panini

    This 4-ingredient Caprese Panini celebrates summer with pesto made with fresh basil, peak season tomatoes, and slices of mozzarella cheese. It's barely a recipe (which is ideal for summer cooking!) and is ready in 30 minutes or less. 


    T U E S D A Y

    Summer Vegetable Tart with Zucchini, Corn, and Herbs

    This summer vegetable tart is filled with zucchini, yellow summer squash, and corn and topped with mozzarella. It's all finished with slivers of mint, basil and dill. This is a perfect side dish or vegetarian main for the summertime bounty from the garden.

    I like to make my own tart crust, but you can substitute a frozen pie crust.

    Easy Mexican Street Corn Casserole

    This Mexican street corn casserole is a little dressed up from the norm with added diced peppers and red onion. Serve it in a crust like a tart, or in a casserole dish.


    T H U R S D A Y

    Quick and Easy Moroccan Couscous Salad Recipe

    This summer couscous salad recipe is the perfect summer salad with barely cooked zucchini, summer squash and corn. Some raisins are added for a Moroccan touch, and it's all tossed in a lemon-garlic vinaigrette.

    4 bowls filled with chilled cucumber soup topped with a relish of grilled corn, tomatoes, dill and a sprinkling of chile flakes.

    Chilled Cucumber Soup with Watercress

    This chilled cucumber soup hits the spot on a hot summer day for lunch or a starter for a dinner party. Like many others, it includes yogurt, but it also uses buttermilk for a little tang. It includes fresh watercress and is topped with a summer salsa of tomatoes, avocado, cilantro and white onion.


    F R I D A Y

    Chickpea salad spread on toast and topped with slices of avocado, a drizzle of olive oil and seasoned salt.

    Chickpea Salad Avocado Toast

    This deliciously healthy chickpea salad is mixed with garlic, onions, lemon and mayonnaise and topped with slices of avocado for a new version of avocado toast. And it's all ready in 20 minutes or less. I slightly mash the chickpeas to make the salad into a spread.


    D E S S E R T

    Fat-Free Peach Frozen Yogurt with Honey

    To make this Peach Frozen Yogurt, fat-free frozen yogurt is churned with juicy roasted peaches and sweetened by honey. Roasting the peaches brings up the peach flavors beautifully! Optional warming spices reminds you of a summer peach pie.
