    Here's a vegetarian meal plan for the upcoming week packed with fall dinners featuring Brussels sprouts and butternut squash.

    Three dinners from this week's vegetarian meal plan plus a fun apple hand pie dessert.

    MEAL PLAN

    MONDAY:  Air Fryer Brussels Sprouts with Quinoa and Dried Cherries

    TUESDAY:  Spicy Delicata Squash Stuffed with Fruity Quinoa

    WEDNESDAY:  Stuffed Acorn Squash

    THURSDAY:  Coconut Curried Butternut Squash Soup

    FRIDAY:  Egg Bake with Hash Browns, Butternut Squash, and Cheese

    DESSERT: Apple Hand Pies

    M O N D A Y

    Air Fryer Balsamic Brussels Sprouts with Quinoa and Dried Cherries

    Brussels sprouts are sliced in half, roasted in the air fryer with a little olive oil and balsamic vinegar, and tossed with dried cherries, quinoa and caramelized onions. The dish is finished in a creamy mustard glaze.

    Spicy Delicata Squash Boats Stuffed with Fruity Quinoa

    Roasted delicata squash boats are basted with a spicy sauce and stuffed with a fruity quinoa pilaf. This richly flavored vegan and gluten-free dish is a perfect side dish (think Thanksgiving!) or a protein-packed main dish all through the fall.


    W E D N E S D A Y

    Stuffed Acorn Squash

    This vegetarian stuffed acorn squash is a perfect fall dinner to satisfy vegetarians and the meat eaters at the table. Roasted acorn squash is stuffed with a cornbread stuffing with poblano peppers, red peppers, apples and sage.

    Butternut squash, apples, curry, and coconut milk are an unbeatable combination. But don't be tempted to skip the tablespoon of brown sugar at the end. It makes a difference to how the flavors come together.

    This egg bake recipe is loaded with hash browns, butternut squash, and cheese. Most of the recipe can be made the night before and is hearty enough for "brinner" (breakfast-for-dinner).
