    Vegetarian Meal Plan: June Week 2

    Here's a vegetarian meal plan for the upcoming week with Eggplant Parmesan, Sloppy Joes made with lentils, tomato soup, and some summer salads.

    MEAL PLAN

    MONDAY:  Eggplant Parmesan Casserole with Pesto

    TUESDAY:  BBQ Lentil Sloppy Joes

    WEDNESDAY:  Quinoa Zucchini Salad with Tomatoes

    THURSDAY:  Roasted Tomato Basil Soup (with Roasted Red Bell Peppers) with Grilled Cheese Sandwich

    FRIDAY:  Roasted Potato Lentil Salad

    WEEKEND BRUNCH: Einkorn Drop Biscuits with Peaches and Blueberries

    DESSERT: 5-Minute Strawberry Sherbet (Made in the Food Processor)

    M O N D A Y

    Eggplant Parmesan Casserole with Pesto

    This summer Italian Eggplant Parmesan Casserole (aka Eggplant Parmigiana) takes eggplant slices coated in pesto, grated mozzarella cheese and Parmesan cheese, and layers them lasagna-style with a fabulous roasted tomato-red pepper sauce you'll want to use for everything.

    Side Dish Suggestion

    This casserole is a dish that stands on its own, but if you want to add another dish, you can go with a simple romaine salad or these air fryer mushrooms.

    BBQ Lentil Sloppy Joes

    These vegetarian Sloppy Joes are made with green lentils, peppers, tomatoes, spices and BBQ sauce for a fantastic, easy weeknight dinner that will make the whole family happy. Instructions are for making this meal in the slow cooker or instant pot!

    Side Dish Suggestion

    This is another dish that can stand on its own, but these air fryer peppers with basil and feta are a great addition.

    W E D N E S D A Y

    Quinoa Zucchini Salad with Tomatoes

    This quick zucchini quinoa salad is a great option for a vegan main meal or side dish that gets to the table in under 20 minutes if you have cooked quinoa already on hand. You just need zucchini, tomatoes, fresh dill and lemon.

    Side Dish Suggestion

    These Marinated Roasted Red Peppers with Tomatoes and Kalamata Olives are great with this dish.

    Easy Roasted Tomato Basil Soup (with Roasted Red Bell Peppers)

    Got tomatoes? Then you must make this easy homemade roasted tomato basil soup to celebrate summer. Roasted tomatoes, onions and red peppers create an incredibly rich flavor that far surpasses anything in a can.

    And serve it with the below grilled cheese sandwich.

    F R I D A Y

    Roasted Potato Lentil Salad

    This entrée-worthy roasted potato salad without mayo is mixed with lentils, and red onion. It's all tossed in a yogurt-soft cheese-dill dressing (no mayonnaise!). Perfect for any pot luck BBQ this summer! (The photo also includes roasted salmon, that I added to a small dish for the omnivores at the table.)

    Side Dish Suggestion

    Keep it simple with these easy air fryer asparagus.

    W E E K E N D B R U N C H

    Einkorn Drop Biscuits with Peaches and Blueberries

    These peach and blueberry drop biscuits are made with Einkorn wheat flour. This kind of flour is touted as being from an early form of wheat before we genetically modified it for mass production. Jovial is the most well-known seller of this healthier wheat flour, and you can find it in most grocery stores. The article provides more information on this flour.

    D E S S E R T

    5-Minute Strawberry Sherbet

    This strawberry sherbet is made in a chilled food processor bowl and blade with frozen strawberries. There's no need to make a traditional custard base for ice cream and churn it in an ice cream maker. Just add super cold milk.
