    Cauliflower

    Cauliflower might be the most versatile vegetable on the planet.

    It can be grated for a keto take on Cilantro-Lime Rice. Puréed for soup or a substitute for mashed potatoes. Slice it into thick steaks and serve over lentils or with a pesto.

    Roast it up, and toss into a citrus salad with some olives or a warm salad of roasted mushrooms and tomatoes with a mushroom vinaigrette.

    Or use it in place of chicken in a vegetarian tetrazzini pasta dinner.

    Or roast it whole until lightly charred for a centerpiece everyone will remember.
