I wrote a post here earlier this week for Cauliflower Scampi, and got a lot of comments about people loving cauliflower. I share that love, and thought I'd offer up some other great ways to use this amazingly flexible vegetable.
One of the bonuses with cauliflower - it goes great with a lot of flavors, but I'm a particular fan of apples and curry. And it's a super healthy food that could easily be described as a superfood.
And you can prepare cauliflower in so many ways!!
For example, you can rice it, like this Cilantro-Lime Cauliflower Rice with Coconut dish. A head of cauliflower can be riced using a box grater, food processor, or a microprocessor. A box grater is a little slower, but less cleanup.
Or use it to make this No-Carb Pizza Dough.
Purée it into a creamy soup without any cream, like this Healthy, Creamy Cauliflower Soup.
Make steaks and sauté in a super-easy sauce like this recipe.
Chop up some cauliflower for casseroles like this Curried Mac 'n Cheese with a Little Kale.

YES! I love using mashed cauliflower in place of mashed potatoes! Cauliflower is indeed so versatile!
