Comforting gratin made with Rainbow chard, quinoa, and cheese. Perfect vegetarian dinner for a chilly night.
I recently started doing some posts for my friends over at the Sunday Supper Movement. I’ve been part of their family for years – almost from the beginning – and now I’ve added one more thread to bind me to this wonderful group of people.
This is a great little gratin for a chilly or rainy day. It’s jam-packed with Rainbow chard (although you can certainly use Swiss chard), quinoa, ricotta cheese, and Swiss cheese. There are some tomatoes, onion, lemon, and a little garlic in the mix, along with a couple of eggs whisked into some milk. The topping is a crumble of bread crumbs, pine nuts, and butter.
