    Vegetarian Meal Plan: August Week 3

    Here's a vegetarian meal plan for the upcoming week with vegetarian Hamburger Helper, roasted eggplant and tomato soup, zucchini noodles pasta, and something to bake over the weekend.

    MEAL PLAN

    MONDAY:  Vegetarian Hamburger Helper

    TUESDAY:  Roasted Eggplant and Tomato Soup

    WEDNESDAY:  Zucchini Noodles with Pesto, Corn, and Tomatoes

    THURSDAY:  Crispy Chickpeas and Roasted Cauliflower Salad

    FRIDAY:  Sicilian Pasta with Eggplant, Tomatoes, and Capers

    WEEKEND: Healthy Apple Oatmeal Muffins

    DESSERT: Apple Pie Bars

    M O N D A Y

    Vegetarian Hamburger Helper

    The pasta cooks in the sauce, and there's almost no meal prep required for this vegetarian version of the hamburger helper so many of us grew up on. This is a perfect week-night meal on busy nights, and if you have kids, they will LOVE it.


    T U E S D A Y

    Roasted Eggplant and Tomato Soup

    This roasted eggplant and tomato soup is one of my favorite soup recipes, and I make it often in the late summer and early fall.  Even eggplant haters will love this soup, and it you make it ahead, the flavors are even better.


    W E D N E S D A Y

    Zucchini Noodles with Pesto, Corn, and Tomatoes

    This low carb zucchini noodles recipe tosses lightly sautéed zucchini noodles with pesto, fresh corn and tomatoes for a keto friendly, gluten-free dinner that can be served as the main course or a side dish. 


    T H U R S D A Y 

    Warm cauliflower salad with sundried tomatoes, kalamata olives, and crispy chickpeas all tossed in a miso dressing. It's all in a cast iron skillet.

    This roasted cauliflower salad comes together with little fuss. And if you air fry the cauliflower and pan fry the chickpeas, this is a 30-minute meal.

    Sicilian Pasta with Eggplant, Tomatoes, and Capers

    This classic Sicilian pasta is one of my favorite vegetarian pasta recipes. It's full of umami! It tosses cooked fusilli noodles with eggplant, tomatoes, fresh herbs and capers. You can use other pasta shapes, but the sauce clings to the shape of the fusilli to maximize the flavor of the dish.

    Apple Oatmeal Muffins

    What makes these oatmeal apple muffins such a great recipe? The oats are soaked in milk for 20 minutes. This makes the texture of these muffins incredibly soft, fluffy and moist. And irresistible!
