    Vegetarian Meal Plan: April Week 5

    Here's a vegetarian meal plan for the upcoming week packed with ideas for spring weather plus my favorite chubby chocolate chip cookies and my Huevos Rancheros recipe that won first place in a nationwide contest.

    MEAL PLAN

    MONDAY:  One-Pot Vegetarian Mushroom Stroganoff

    TUESDAY:  Chickpea Flour Pancakes with Spinach and Scallions

    WEDNESDAY:  Vegan Carrot Coconut and Ginger Soup with Curry

    THURSDAY:  Easy Swiss Chard Sauté with Quinoa, Capers and Olives

    FRIDAY:  Cauliflower Steaks with Chimichurri Lentils and Tahini Sauce

    BRUNCH: Easy Huevos Rancheros Recipe (Award Winner!)

    DESSERT: Perfect Chubby Chewy Chocolate Chip Cookies Recipe

    One-Pot Vegetarian Mushroom Stroganoff

    This is a flavorful mushroom stroganoff that's packed with umami flavor from three kinds of mushrooms, soy sauce, sherry wine, and mustard. And it's made creamy with sour cream. Serve it over mashed potatoes or go traditional with egg noodles. A video for how to make this dish is included in the Recipe Card.

    Chickpea Flour Pancakes with Spinach and Scallions

    These mini chickpea pancakes are made with chickpea flour, rosemary, scallions, spinach, and lemon for a delicious appetizer, lunch, or dinner. Pancakes or crepes made with chickpea flour are called farinata in Italy and socca in southern France.

    Easy Huevos Rancheros Recipe (Award Winner!)

    Huevos Rancheros is a traditional Mexican breakfast of crispy corn tortillas, refried beans, and warm salsa, with a fried egg on top. This recipe, which won first prize in a contest, adds roasted mini peppers and uses salsa verde instead of the more traditional red salsa.
