    Strawberry Oatmeal Bars with Blueberries

    Made with fresh, juicy strawberries, plump blueberries and a buttery oat crust, these strawberry oatmeal bars are perfect for breakfast, snacks, or dessert.

    They're easy to make, and can keep in the refrigerator for 1 week, or on the countertop for 3 - 4 days.

    Spring is here, and the fresh strawberries at the market are looking great. And Memorial Day weekend is coming up fast, which for me, kicks off BBQ season. I like to serve easy desserts which come together quickly and feature seasonal fruit.

    Oatmeal bars are the perfect solution. You can swap out the strawberries and blueberries for other fruit too.

    What are strawberry oatmeal bars?

    Essentially, anything that incorporates a lot of oats in a baked bar can be considered an oatmeal bar. The amount is usually around the same amount of flour, so if the recipe calls for 1 cup flour, you'll need around 1 cup rolled oats.

    Strawberry Oatmeal Bars can be made with fresh strawberries, like this recipe, or simplified with strawberry preserves.

    Main Ingredients for Strawberry Oat Bars

    • Fresh strawberries
    • Fresh blueberries
    • Lemon juice
    • Sugar
    • Corn starch
    • All purpose flour
    • Rolled oats - not instant oats!
    • Brown sugar
    • Candied ginger
    • Baking soda (optional) - this makes the crust lighter.
    • Unsalted butter

    Recommended Equipment

    Ceramic baking dish, 8" X 8"

    Instructions

    Step 1 (10 minutes)

    Prep the strawberries. Slice the strawberries. Combine them with the blueberries, lemon juice, corn starch, and 1 tablespoon sugar in a medium bowl. Set aside.

    Step 2 (10 minutes)

    Stir together the dry ingredients. Using a sharp chef's knife, cut the candied ginger pieces into the smallest pieces you can. In a separate large bowl, whisk together the flour, oats, remaining granulated sugar, brown sugar, ginger pieces, salt, and baking soda.

    Step 3 (2 minutes)

    Make a batter. Melt the butter and stir it into the dry ingredients. I use the microwave oven to melt the butter super quick. You'll have around 3 cups of a very thick batter.

    Step 4 (5 minutes)

    Get ready to bake. Line the baking dish with foil so that the ends fall over the sides of the dish. Press 2 cups of the oat mixture in an even layer on the bottom of the baking pan. Spread the berry mixture evenly across the crust, then sprinkle evenly with the remaining buttery oat mixture.

    Step 5 (35 minutes)

    Bake: Bake for about 35 - 40 minutes in a 350˚F oven until the top is golden brown and the berries are bubbling up around the edges.

    Step 6 (30 minutes)

    Cool, cut and serve. Move the baking dish to a cooling rack and let the oatmeal bars cool completely before removing. To remove the oatmeal bars from the dish, just lift the foil edges up. Remove the foil, and cut the strawberry oatmeal bars into 2-inch squares and serve.

    Step 7

    Store. Oatmeal bars can be kept in an airtight container on the counter for two to three days. Or keep them in the refrigerator for up to 1 week.

    If you refrigerate them, I recommend you warm them in the microwave oven before eating.

    Ingredients

    Strawberry Filling

    • 2 ½ cups fresh strawberries
    • ½ cup fresh blueberries
    • 1 
 teaspoon lemon juice

    Crust and Crumble

    • 1 ½
 cups all-purpose flour (6.75 ounces)
    • 1 ¼
 cups rolled oats
    • ⅓ cup
