These are my 6 favorite chocolate desserts on The Wimpy Vegetarian, most of which come together in minutes and just need chill time. They include chocolate bark, frozen mudslides, chocolate sorbet and truffles.

Chocolate is my favorite response to stress.
Late to work? Grab a chocolate croissant.
Heavy traffic getting home and my new puppy toilet-papered the house? Chocolate truffles.
Power cut off because I forgot to pay the bill? Reach for chocolate brownies.
If chocolate is your go-to when life hurls surprises at you, then you need these 6 favorite chocolate recipes. Stat!
#1. Chocolate and Pretzel Bark with Sea Salt

Bark is easy to make. It takes 20 minutes to create, mostly involving melting the chocolate, and 30 minutes to set up in the refrigerator. If you don't want pretzels, break down peppermint sticks into crumbly pieces, and use that instead. As a tip, bark makes a great holiday gift!!
#2. Chocolately Chocolate Brownie

These are hands down my favorite brownies. The recipe is based on one from the Queen of chocolate, Alice Medrich, who I was lucky enough to have as a teacher on chocolate when I was in culinary school. For those of you who might not know her, she used to own a shop called Cocolat in Berkeley, and has authored oodles of cookbooks filled with recipes that work every single time.
#3. Healthly Fudge with Peanut Butter

This fabulous little recipe comes by way of my step-daughter. All you need is peanut butter, coconut oil, coconut nectar (or honey), vanilla extract and unsweetened chocolate. Oh, and a little sea salt for a finishing flourish. Melt it all together and refrigerate for at least a couple of hours before devouring.
#4. Mexican Chocolate Sorbet

This sorbet comes together in about 20 minutes on the stove and then cools in the refrigerator for a couple of hours before being poured into an ice cream maker. If you prefer your chocolate straight up, just eliminate the cinnamon and cardamom.
#5. Chocolate Coconut Truffles with Jam

Truffles are a little trickier to make, and this post includes tips I learned from Alice Medrich of chocolate fame in culinary school. The beauty of them, literally, is that they're dusted with cocoa powder at the end, which can cover imperfections of the truffles.
#6. Frozen Mudslide

Frozen Mudslides double as a drink or dessert, depending on whether you stir in the ice cream or just pour the Bailey's, Kahlua and vodka over the scoops and serve affogato-style. Either way, this dessert / cocktail takes about 5 minutes to make!
