This fabulous roasted tomatoes appetizer is barely a recipe, and gets raves at parties. Roast the tomatoes ahead, if that works better for your busy schedule. Fire roast your own tomatoes either under the broiler or in the air fryer, toss with fresh herbs, and serve with feta cheese and crackers.
For a party, you can serve the components of the appetizer in separate dishes, allowing people to build their own, or assemble them just before serving. They should only be one or two bites when stacked.

When I'm preparing for a party, I make the dessert first and then the rest of the meal. The appetizers go into an "if I have time" file in my head. And often, I just arrange a selection of cheeses on a wooden board with some crackers.
So, easy appetizers that come together without much planning are my favorites. Are you with me?
This roasted red pepper aioli is a great example, along with these roasted peppers with basil and feta that I roast in the air fryer. If I have a stash of frozen puff pastry and Boursin on hand, I make this 4- ingredient asparagus puff pastry appetizer.
But now, this quick roasted tomato appetizer is my newest favorite. Yay!
🤷♀️ What are fire roasted tomatoes?
Canned fire roasted tomatoes are tomatoes that are roasted over an open flame. You can approximate the same thing using your grill (if you have a gas grill, use wood chips to get that smoky flavor).
Or quick roast tomatoes under the broiler or in an air fryer. This will char the tomatoes, but without a smoky flavor.

The secret to faster and easier meals often lies in the ingredients. For example, store-bought items and ingredients you make ahead and store in the refrigerator (or freezer) can turn a 60-minute recipe into a 30-minutes meal or less.

- Fire roasted tomatoes - make your own using cherry tomatoes. Canned fire roasted tomatoes are typically diced, with pieces that are too small for this appetizer.
- Feta cheese - purchase feta in a block so you can cut slices to easily stack on crackers. I prefer feta made from goat and sheep milk for a little more tang.
- Fresh herbs - I use both basil and oregano with excellent results.
- Crackers - use your favorite crackers, but aim towards smaller, one or two bite crackers. I use Mary's Gone Crackers, as I find they're the perfect size.

🍽️ Serving ideas
- If you don't have a block of feta to cut slices, and only have crumbled feta cheese, toss the roasted tomatoes with the crumbled feta and basil. Serve with crackers and an appetizer knife for spreading the tomatoes (shown above).
- Serve the roasted tomatoes (with or without the crumbled feta and basil) over slices of feta cheese stacked on small crackers (shown below). This is my favorite way to serve this appetizer, as it ensures you get enough feta for a contrast with the roasted tomatoes.

Fire Roasted Tomatoes Appetizer with Feta Cheese
Ingredients
- 1 cup freshly fire roasted tomatoes (not canned!)
- 1 tablespoon thinly sliced basil leaves
- ½ cup sliced feta cheese sliced from a block
- 20 small crackers I use Mary's Gone Crackers
Instructions
- Make the fire roasted tomatoes using the recipe linked in the Ingredients, above. Stir in the thinly sliced basil.
- Slice a block of feta cheese into ⅛" thick slices and stack on the crackers.
- Spoon the roasted tomatoes over the feta cheese.
