One of the best things about autumn is winter squash. Butternut squash, acorn squash, delicata squash, pumpkin and kabocha squash. I love them all.

Some of my family's favorites are:
Butternut squash soup made with roasted butternut, coconut milk and warming spices like curry powder, cinnamon and cumin.
Delicata squash stuffed with quinoa, apples, shallots, tofu, spinach and raisins.
Acorn squash stuffed with charred poblano and cornbread stuffing.
Delicata squash and apple galette with caramelized onions and crumbled gorgonzola cheese.
And Thanksgiving favorites Hasselback Butternut Squash with a Pomegranate Glaze and Roasted Butternut Squash with Quinoa, Apple and Fig Stuffing.
