Stouffer's Welsh Rarebit Recipe

This is Stouffer's Welsh Rarebit cheese sauce recipe from their restaurant chain on the east coast. It's cheesy with extra umami from mustard powder and Worcestershire sauce (I use a vegan version). It's traditionally spread on toasts and slid under the broiler until the cheese is molten and bubbly. This recipe makes about 4 cups.

Ingredients

Welsh Rarebit Cheese Sauce

  • ¼ cup unsalted butter
  • cup all-purpose flour
  • 2 teaspoons kosher salt
  • ½ teaspoon dry mustard or Dijon mustard
  • teaspoon paprika
  • 1 ⅓ cup whole milk hot
  • 1 ⅓ cup heavy cream hot
  • ¾ pound sharp Cheddar cheese grated
  • 1 tablespoon Worcestershire sauce, or Annie's Vegan Worcestershire Sauce to keep it vegetarian
  • pinch cayenne pepper

Instructions

  • Melt the butter in a heavy bottomed pot, such as a Le Creuset, over medium-low heat. A large, deep skillet also works very well.
    Add the flour, salt, dry mustard, and paprika to the pan and stir with a wooden spoon until it forms a paste. Cook for 2-3 minutes.
  • Heat the milk in the microwave oven (or on the stovetop) until it's hot, and gradually whisk it into the paste. It's important to keep whisking the mixture.
    Heat the heavy cream in the microwave oven (or on the stovetop) until it's hot, and gradually whisk it into the sauce. It's important to keep a constant whisking.
    Cook for 8-10 minutes to allow it to thicken, occasionally whisking.
  • Add the grated cheddar cheese and fold it into the sauce using a silicone spatula until the cheese is completely melted. A luscious, smooth sauce developed after 2-3 minutes.
  • Stir in the Worcestershire sauce. Finish with a pinch of cayenne.
