Honey and Lime Melon Appetizer Skewers with Mint

Watermelon, cantaloup and honeydew melon appetizer balls are threaded onto skewers, and marinated in honey and lime for an easy, refreshing appetizer. The finishing touch is a flurry of mint.

Ingredients

  • 1 medium cantaloupe
  • 1 medium honeydew
  • 1 small watermelon
  • ¼ cup honey
  • ¼ cup lime juice
  • 2 teaspoons finely chopped fresh ginger or ginger paste by Gourmet Garden
  • ½ teaspoon kosher salt
  • ½ cup fresh mint, very thinly sliced

Instructions

  • Using the larger end of a melon baller, scoop out as many melon balls as you can from the cantaloupe, honeydew and watermelon.
    I got around around a total of 100 melon balls. Slide them onto skewers. You should be able to get 6 - 7 melon balls onto each skewer.
  • Arrange the skewers on a rimmed baking sheet.
  • Whisk together the honey, lime juice, ginger, salt and half of the mint.
    Pour half of the marinade over the melon balls. Turn the skewers after 2 - 3 minutes to drench them. Pour the remaining marinade over the melon.
    Allow the melon to soak up the marinade for 1 - 2 minutes, and serve with the remaining mint.
