Brunch is easy to make vegetarian, what with all the egg, smoothie, pancake, waffle, and bread options. Here are ten of my most popular brunch dishes I’ve posted over the years – just in case you missed them. And just in time for Mother’s Day. A very Happy Mother’s Day to all you moms out there (including moms of dogs, cats, and other 4-legged members of your family).
ORANGE – MANGO SMOOTHIE WITH LIME & GINGER

STRAWBERRY BUTTERMILK SCONES

Gribiche is a French creation. The egg yolk is mashed into a paste, and whisked with olive oil, vinegar and mustard, then briny flavors are added with capers and cornichon pickles. This recipe spreads the ‘gribiched’ eggs over asparagus for a great side dish. Get the recipe here.
LIGHT ASPARAGUS-GRUYERE QUICHE WITH HASH-BROWN CRUST
The best quiche, IMHO, is asparagus quiche. And I personally love ones with a hash browns crust, but feel free to make this crustless or with a traditional crust. Get the recipe here.
