I've been in Yosemite most of this week, and so haven't been able to complete photography on a couple of new recipes I want to bring to you. In the meantime, here's another Weekly Vegetarian Menu of dinner ideas for the next week. If your week next week looks as busy as mine promises to be, you won't always have the time you'd like to cook up something healthy. I get it. In answer to that, this selection is focused on easy dinners!
As I mentioned last week, I scour blogs I enjoy for recipes I think you'll like too, and then throw in some of my own recipes for this series.
Lentil Sloppy Joes
Bonus points on this one for being vegan! A quick chop and sauté of sweet bell peppers and onion, cook up some lentils in minutes, and add McCormick Sweet and Smoky Sloppy Joes Skillet Sauce. Seriously, it couldn't be easier. I don't use many pre-prepared foods, as you know, but this one is an exception for me. Find the recipe here on my own blog.
Lemon-y, Artichoke-y, Kale-y One-Pot Pasta
First, the flavors drew me to the recipe. The combination of lemon, artichoke and kale are solid winners on my plate. But what made me want to make it was the easy nature of it. You cook the pasta in just enough water that there's a small amount left over to use as a base for the sauce. Go get this recipe here on the A Cozy Kitchen blog.
Asian Charred Broccoli Quinoa Bowl
"Charred", when applied to almost any vegetable is code for "heightened flavor". There are several ingredients to this recipe, but it looks to come together very easily with little prepping required. Spicy Poblano, Black Bean, and Quinoa Enchiladas
Anyone who follows my blog knows I love Mexican food - it's my favorite go-to comfort food. Well, that and Italian food, of course. What I like about this recipe, besides the fact that it's by a well-trusted blogger, is that most of the ingredients are probably in your pantry and refrigerator. And if they're not, they should be.
